Ingredients: 2 filet mignon steaks (6-8 oz each) Salt and black pepper, to taste – 2 tbsp olive oil 2 tbsp butter 8 oz cremini or baby bella mushrooms, sliced 2 cloves garlic, minced

½ cup beef broth ½ cup heavy cream ¼ cup dry white wine (optional) 1 tsp Dijon mustard 1 tsp fresh thyme (or ½ tsp dried)

Prepare the Steak: Season filet mignon generously with salt and pepper. Sear the Filet: Heat olive oil in a skillet over medium-high heat. Sear the steaks for 3-4 minutes per side until golden brown. Remove and let rest.
