Ingredients:– 1 lb boneless, skinless chicken breast or thighs (cut into pieces)– 1 medium onion, diced– 2 cloves garlic, minced– 2 medium carrots, peeled and sliced– 2 celery stalks, diced– 1 zucchini, diced– 1 cup green beans, chopped (fresh or frozen)– 1 can (14.5 oz) diced tomatoes, with juice– 1 1/2 cups diced potatoes (peeled or unpeeled)
– 4 cups low-sodium chicken broth– 1 tsp dried thyme– 1 tsp dried oregano– 1/2 tsp ground black pepper– 1/2 tsp salt (adjust to taste)– 1 bay leaf– 1 tbsp olive oil– Optional: Fresh parsley for garnish after cooking
Sauté the Aromatics:– Turn on the Instant Pot and set it to the Sauté mode. Add 1 tablespoon olive oil to the pot.– Once the oil is hot, add the onion and garlic. Sauté for 2-3 minutes until the onion is soft and translucent.
– Add the chicken breast or thighs to the pot and cook for 4-5 minutes, stirring occasionally to brown on all sides.– Note: You don’t need to cook the chicken all the way through at this point since it will cook further under pressure.
Add the carrots, celery, zucchini, green beans, diced tomatoes, potatoes, chicken broth, thyme, oregano, black pepper, salt, and bay leaf to the Instant Pot.
– Secure the lid on the Instant Pot and make sure the valve is set to Sealing.– Set the Instant Pot to Pressure Cook (or Manual) mode on High Pressure for 10 minutes.– Once the cooking time is complete, let the pressure naturally release for about 10 minutes, then carefully turn the valve to Venting to release any remaining pressure.
– If you prefer shredded chicken, remove the cooked chicken from the pot and use two forks to shred it.– Return the shredded chicken to the pot and stir to combine.
