Ingredients: 2 slices of whole-grain or sourdough bread ½ ripe avocado, mashed 1 tbsp basil pesto 1 slice of fresh tomato

1 handful of spinach or arugula 1 slice of mozzarella or feta cheese (optional) Salt and black pepper to taste 1 tsp olive oil or butter for toasting (optional)

Instructions: Toast the bread slices lightly for extra crunch. Spread the pesto evenly on one slice of bread.

Mash the avocado on the other slice and season with salt and black pepper. Layer on the spinach, tomato slice, and cheese (if using). Press both slices together and enjoy!
